Chinese Poached Chicken 白斩鸡

Ingredients 材料 :

  • Half of a whole chicken / 半只 鸡
  • 1 tablespoon ginger shreds /  1 汤匙 姜丝
  • 1 tablespoon onion shreds (white part) / 1 汤匙 葱白切丝

Marinating Sauce 腌料

  • 1 tablespoon light soy sauce / 1 汤匙 生抽
  • 1 teaspoon Chinese cooking wine / 1 茶匙 料酒
  • 1/2 teaspoon salt / 1/2 茶匙 盐

Dip Sauce 蘸酱

  • 1 tablespoon oyster sauce / 1 汤匙 蚝油
  • 1 tablespoon light soy sauce / 1 汤匙 生抽
  • 4 tablespoon water / 4 汤匙 水
  • 1 garlic clove / 1 瓣 蒜
  • 1 tablespoon chopped green onions / 1 汤匙 葱花
  • 1 tablespoon sesame oil / 1 汤匙 芝麻油/ 香油

Instruction 做法 :

  1.  Pat dry the chicken once thawed then spread the marinating sauce evenly on both sides.
  2. Lay ginger shred and green onion shreds over to marinate at least 30 minutes. Then place in your steamer. Steam with high fire around 20-30 minutes until soft. Transfer out and cut into chunks of your favorite size. Garnish with green onions. 
  3.  Make the dipping sauce. Heat up 1 tablespoon of sesame oil in pan and stir fry chopped garlic and green onion until aroma. Then, add oyster sauce, light soy sauce and water. Mix well and bring all the content to a boiling. Transfer to dipping bowl and cool down.
  4. Serve poached chicken with dipping sauce.


  1. 解冻后,将鸡只多余的水分擦干。准备好腌料,均匀涂抹在鸡只两面。
  2. 涂抹颜料后,加入姜丝意思葱白腌制30分钟以上。腌制好后,蒸锅大火沸水,鸡只蒸约 20-30分钟至肉质变软。取出熟透的鸡肉,切成入口的尺寸,再用青葱装饰。
  3. 再来准备蘸酱。平底锅热锅后加入1汤匙芝麻油,加入蒜蓉以及青葱爆香。之后,加入蚝油,生抽以及水。煮沸,搅拌均匀后即可。
  4. 白斩鸡可搭配蘸酱食用。
